This Healthy 4-Ingredient Strawberry Ice Cream is made from fruit and a touch of vanilla extract, yet it has the texture of soft-serve ice cream. The secret is frozen bananas blended until smooth.
After years of making banana-based “nice cream,” I’ve refined the technique to get a creamy, scoopable result. For best texture, prepare and process ingredients as described below.
Healthy 4-Ingredient Strawberry Ice Cream
Ingredients
- 3 very ripe medium bananas, frozen
- 1/2 cup sliced strawberries, frozen
- 1/2 teaspoon vanilla extract
- 2 pitted dates soaked in water for 60 minutes
- Vanilla Roasted Strawberries optional
Instructions

Place all ingredients in a food processor or high-speed blender. Blend, pausing to scrape the sides as needed, until the frozen fruit and bananas turn into a smooth, creamy ice cream. If the mixture is too thick, add a splash of water or plant milk to help it blend.

Serve immediately for soft-serve texture, or transfer to an airtight container and freeze for 1–2 hours for a firmer scoop. Top with optional vanilla roasted strawberries or fresh fruit before serving.
