Holiday Breakfast
Growing up, we often spent Christmas at my grandparents’ house. I loved the festive feeling there — a beautifully decorated tree, ornaments and little holiday crafts my Granny made. She kept holiday baskets filled with candy around the house, which were irresistible for sneaking a treat despite the rules.
Christmas Eve meant steak and baked potatoes, but Christmas morning was reserved for a big breakfast. Since switching to gluten-free eating, our holiday morning menu has changed, but the nostalgia remains.

After going gluten-free I hadn’t had a proper cinnamon roll for a long time, and I missed them. I prefer the gooey caramel-style rolls over the frosted ones: warm, sticky, and rich — pure comfort.
I also like recipes that don’t involve a dozen complicated steps. When you can take a shortcut and still get great results, I’m all in. For these cinnamon rolls the shortcut is brilliant and reliable.

Prepare the pizza crust mix according to the package directions. Roll the prepared dough into a rectangle about 12 x 15 inches. Avoid overworking the dough to prevent a tough texture. If you can’t find Enjoy Life Pizza Crust Mix locally, you can order it online or try another brand, though results may vary.
Dairy-Free Butter
Butter is essential for the classic cinnamon roll flavor. I used a soy-free buttery spread that worked well, but use any dairy-free butter you prefer. Other than that, you only need brown sugar and cinnamon for the filling.

Gooey Cinnamon Rolls- Top 8 Allergen Free
Ingredients
- 1 box Enjoy Life Pizza Crust prepared as directed on package
- 6 Tablespoons Dairy Free Butter divided
- 2/3 cup packed brown sugar divided
- 1 Tablespoon Cinnamon
- 2 Tablespoons water
Instructions

On the stove, melt 4 tablespoons of the dairy-free butter with 1/3 cup brown sugar and 2 tablespoons water. Stir until combined and remove from heat when it begins to bubble.

Pour the caramel mixture into the bottom of a 9-inch pie pan.

Roll out the prepared pizza crust into a rectangle.

Melt the remaining 2 tablespoons of butter and brush it over the dough.

Combine the remaining 1/3 cup brown sugar with the cinnamon and sprinkle evenly over the dough.

Tightly roll the dough starting from the long edge to form a log.

Cut the log into rounds about 1 inch thick.

Place the rounds on top of the caramel in the pie dish.

Bake at 400°F for 25–30 minutes, until the rolls are cooked through and the caramel is bubbly.

Carefully place a platter over the pie dish and invert so the caramel tops the rolls. Serve warm.
