Wholesome Spiced Quick Bread Recipe

This is my go-to healthy quick bread: simple, one-bowl, no mixer required and about seven minutes prep. I enjoy it for breakfast or as a snack. Feel free to use your favorite spices.

100% Whole Wheat Bread Recipe without Yeast

This loaf uses only whole wheat flour and contains no white flour, dairy, or yeast. Natural sweeteners—maple syrup or honey and a small amount of coconut (or brown) sugar—keep the sweetness gentle while keeping the batter from becoming too wet. Unsweetened almond milk and simple pantry spices round out the ingredients. If you don’t have coconut sugar, brown sugar works fine.

This recipe intentionally combines two sweeteners to control liquid content and maintain a dense, satisfying texture rather than an overly airy crumb. The small loaf size means it bakes and cools quickly, but it also disappears fast—many people make a double batch or repeat the recipe the next day.

Don’t be surprised if the finished loaf is on the short side. That’s normal for this small, wholesome loaf. It may look modest, but the flavor and texture are what matter—give it a try.

Ingredients

  • 3 tablespoons coconut sugar (or brown sugar)
  • 2 teaspoons baking powder
  • 3/4 teaspoon fine salt
  • 1/2 tablespoon ground cinnamon (optional)
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1/2 cup unsweetened almond milk, plain or vanilla
  • 1/3 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 1/4 cups whole wheat flour
  • Coarse sugar (or more coconut sugar), for sprinkling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl combine the sugar, baking powder, salt, and chosen spices.
  3. Stir briefly with a spoon to blend the dry ingredients.
  4. Beat in the oil and eggs until incorporated.
  5. Add the almond milk, maple syrup or honey, and vanilla extract; mix until smooth.
  6. Fold in the whole wheat flour until fully incorporated and the batter is uniform.
  7. Line a 9×5-inch loaf pan with parchment paper or spray with nonstick spray.
  8. Pour the batter into the pan and smooth the top. Sprinkle with coarse sugar if desired.
  9. Bake 36–37 minutes, or until a toothpick inserted in the center comes out clean or with very few crumbs. (My loaves finish at 37 minutes.)
  10. Place the pan on a wire rack and cool at least 15 minutes before slicing.

Notes

  • I’ve tested this loaf with cinnamon and nutmeg; for other spices, use your familiar measurements and taste judgement.
  • Using cooking spray instead of parchment will produce a slightly crisper crust.
  • Because the batter quantity is modest, the loaf will be shorter than many quick breads—this is normal.
  • If you don’t have a wire rack, allow extra cooling time; a rack simply helps the bread cool evenly and faster.
