  • 12 oz raspberries, fresh or defrosted from frozen
  • 2 tbsp granulated sugar
  • 2 cups milk
  • 1/2 cup heavy cream
  • 6 oz white chocolate, finely chopped
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  • Sprinkle the sugar over the raspberries and toss to combine. Let them sit 10–15 minutes until they soften and release their juices. Blend the raspberries, then strain the puree through a fine mesh sieve or cheesecloth to remove the seeds. You should have about 3/4 cup of puree; save any extra.
  • In a medium saucepan, combine the milk and cream and bring to a gentle simmer—bubbles should appear around the edges but do not let it boil. Remove from heat, add the chopped white chocolate, and whisk until melted. Stir in the raspberry puree, vanilla, and a pinch of salt.
