We’re always exploring creative, delicious ways to add more veggies to meals — and we’ve even written a book about it — but these Green Energy Popsicles are a fast, kid-friendly way to enjoy spinach without thinking of it as a salad ingredient only.
These popsicles are surprisingly tasty and make getting leafy greens easy. Spinach is an excellent source of folate (folic acid), which plays a key role in maintaining healthy homocysteine levels. Elevated homocysteine can interfere with blood flow and nutrient delivery to the brain, leaving you feeling tired or sluggish. Regularly eating folate-rich foods like spinach supports energy and overall health.

GREEN ENERGY POPSICLES
Ingredients
- 2 bananas
- ½ pear, cored and peeled
- ½ pineapple, cored and peeled
- 1 ½ cups fresh spinach
- ¼ cup orange juice
- 2 tablespoons lemon juice
Directions
Place all ingredients in a blender and process until completely smooth. Pour the mixture into popsicle molds and freeze for at least four hours, or until solid. Makes about 12 popsicles.
Nutrition facts per popsicle: approximately 42 calories, 0 g fat, 1 g fiber, 11 g carbohydrates, 1 g protein.
