Green Energy Popsicles: Homemade Plant-Based Frozen Treats

These popsicles are surprisingly tasty and make getting leafy greens easy. Spinach is an excellent source of folate (folic acid), which plays a key role in maintaining healthy homocysteine levels. Elevated homocysteine can interfere with blood flow and nutrient delivery to the brain, leaving you feeling tired or sluggish. Ingredients

  • 2 bananas
  • ½ pear, cored and peeled
  • ½ pineapple, cored and peeled
  • 1 ½ cups fresh spinach
  • ¼ cup orange juice
  • 2 tablespoons lemon juice

Directions

Place all ingredients in a blender and process until completely smooth. Pour the mixture into popsicle molds and freeze for at least four hours, or until solid. Makes about 12 popsicles.
