Loaded Mashed Potatoes

These mashed potatoes are loaded with cheddar, bacon, and green onions for maximum comfort. With a few extra steps beyond basic mashed potatoes, you’ll have a hearty, satisfying side dish that pairs well with weeknight dinners or holiday meals.

Ingredients
- 5-6 red or russet potatoes
- 2 tbsp softened butter
- 4 oz softened cream cheese
- 4 tbsp heavy cream
- 4 tbsp milk
- 1/2 cup cheddar cheese, shredded
- 5 strips bacon, chopped
- handful of green onions, sliced
- 2 cloves garlic, minced
- salt and pepper to taste
Instructions
- Place the potatoes in a large pot, cover with water, and bring to a boil. Cook about 25 minutes, or until tender when pierced with a fork.
- While the potatoes cook, fry the bacon until crisp, then chop roughly and set aside.
- Drain the potatoes and return them to the pot. Mash until mostly smooth.
- Add the butter, cream cheese, heavy cream, milk, minced garlic, shredded cheddar, and most of the bacon. Stir until well combined and creamy.
- Season with salt and pepper to taste. Stir in most of the sliced green onions, reserving a little for garnish.
- Transfer the mashed potatoes to a baking dish and bake in a preheated oven at 375°F (190°C) for about 10 minutes, until heated through and the cheese is melted.
- Top with remaining bacon and green onions. Serve warm and enjoy.
