Why You’ll Love This Recipe:

  • Quick & Easy: Ready in under an hour with minimal prep.
  • Budget-Friendly: Uses basic pantry staples and fresh vegetables.
  • Healthy & Wholesome: Naturally gluten-free and packed with veggies.
  • Seasonal & Versatile: Light enough for spring, cozy enough for winter.

Difference Between This Italian-Style and French Onion Soup

Traditional French onion soup is made with slowly caramelized onions, beef broth, and often topped with bread and melted Gruyère. That approach builds deep, sweet flavors but takes time. This Italian-inspired version skips long caramelization: the onions are softened rather than deeply browned, which keeps the soup lighter and faster to prepare. Shredded potatoes are added to give body and a creamy texture without added thickeners. The result is a herb-forward, hearty yet delicate soup that comes together quickly.

If you can find Tropea or other regional sweet onions, they work beautifully here. Otherwise, yellow or red onions — or a mix — are perfect. For a naturally sweeter option, use Vidalia onions when they are in season.

Tips for Success

  • Choose starchy potatoes: Russet or Yukon Gold shred well and help thicken the soup naturally.
  • For extra creaminess: Purée a portion of the soup or finish with a splash of cream.
  • Boost the flavour: Deglaze the pot with a splash of white wine while the onions cook, and add a pinch of red pepper flakes for warmth.
  • Serve as a meal: Pair with crusty bread or a simple green salad to round out the dish.

Storing & Reheating

  • Refrigerate: Keep leftovers in an airtight container for up to 4 days.
  • Freeze: Freeze for up to 3 months in a suitable container; thaw overnight in the fridge before reheating.
  • Reheat: Warm gently on the stovetop over medium heat, adding a splash of broth if the soup has thickened too much.

Ingredients

  • 3 medium Russet or Yukon Gold potatoes — about 3 cups shredded
  • 1 tbsp canola oil (or other neutral oil)
  • 4 large onions — 3–4 cups thinly sliced (red, yellow, white, or a mix)
  • 2 cloves garlic, minced
  • 3 sprigs fresh thyme (or 1 tsp dried)
  • 6 cups vegetable or beef broth
  • 1 bay leaf
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese
  • Chopped parsley for garnish
  • Hot pepper flakes, optional

Instructions

  1. Wash potatoes and remove blemishes; peeling is optional. Shred the potatoes using the large side of a grater. Place shredded potatoes in cold water to prevent browning and set aside.
  2. Heat oil in a large pot over medium heat. Add the sliced onions and cook until softened but not browned, about 6–8 minutes.
  3. Add the minced garlic and thyme, cooking for about 1 minute until fragrant.
  4. Drain the shredded potatoes and add them to the pot. Pour in the broth and add the bay leaf. Bring to a simmer and cook for about 25 minutes, or until the potatoes are tender.
  5. Remove the bay leaf. Taste and adjust seasoning with salt and pepper.
  6. Ladle into bowls and top with grated Parmesan, chopped parsley, and hot pepper flakes if desired.

Notes

Onions: Use red, white, yellow, or Vidalia (when in season) for subtle differences in sweetness and color. Caramelizing the onions will add sweetness and depth but is optional.

Leftovers: Store in an airtight container in the fridge for up to 4 days. Freeze for up to 3 months.
