- 1 1/2 cups frozen corn, defrosted

Instructions
- Preheat the oven to 180°C (350°F). Lightly spray or oil a large ovenproof dish.
- In a large skillet, brown the ground beef over medium-high heat until cooked through. Drain excess fat if needed.
- Add the canned tomatoes, dried chilies (if using), and the defrosted corn to the beef. Stir and heat through until bubbling and well combined.
- Transfer the meat mixture to the prepared oven dish and spread it evenly.
- Sprinkle most of the grated cheddar cheese over the meat, reserving 2–3 tablespoons for later.
- In a medium bowl, whisk together the flour, polenta (or cornmeal), sugar, salt, and baking powder. Add the beaten egg, milk, and vegetable oil; mix until smooth.
- Pour the cornbread batter evenly over the cheddar layer. Sprinkle the remaining cheddar on top.
- Bake uncovered for 25–30 minutes, or until the cornbread topping has set and is lightly golden.
- Remove from the oven and let the casserole rest for about 5 minutes before serving.
