HOW TO STORE MEXICAN CHICKEN CORN CHOWDER:

Ingredients
- 1 1/2 pounds boneless, skinless chicken breasts, cut into bite-size pieces
- 1/3 cup chopped onion
- 2 cloves garlic, minced
- 4 tablespoons butter, divided
- 1 1/4 cups chicken broth
- 1 teaspoon ground cumin
- 2 cups half-and-half
- 2 cups shredded Monterey Jack cheese
- 1 can (14 3/4 oz) cream-style corn
- 1 can (4 oz) diced green chiles, undrained
- 1/2 teaspoon Tabasco sauce (or hot sauce), optional
- Salt & pepper to taste
Toppings:
- Fresh cilantro
- Tortilla strips or crushed tortilla chips
- Sour cream
- Additional grated cheese
Instructions
- In a Dutch oven or large saucepan, melt 3 tablespoons of butter over medium heat. Add the chicken, chopped onion and minced garlic. Cook, stirring occasionally, until the chicken is no longer pink and the onion is softened.
- Add the chicken broth and cumin. Bring to a boil, then reduce heat and simmer for about 5 minutes to meld the flavors.
- Reduce the heat to low. Stir in the half-and-half, cream-style corn, shredded cheese, diced green chiles and Tabasco sauce if using. Cook gently, stirring, until the cheese is fully melted and the chowder is heated through. Do not boil vigorously to avoid separating the dairy.
- Stir in the remaining tablespoon of butter for added richness. Season with salt and pepper to taste.
