Creamy Loaded Mashed Potatoes with Bacon and Cheddar

When I was a teenager I was obsessed with T.G.I. Friday’s Loaded Mashed Potatoes and Jack Daniel’s chicken. Now I mostly cook at home, and when I eat out I prefer Indian or Mexican food. Those loaded mashed potatoes were packed with cheese, bacon, butter, and garlic — simple and comforting. You just cook the potatoes, add the mix-ins, and mash. Easy and delicious.

Loaded Mashed Potatoes

These mashed potatoes are loaded with cheddar, bacon, and green onions for maximum comfort. With a few extra steps beyond basic mashed potatoes, you’ll have a hearty, satisfying side dish that pairs well with weeknight dinners or holiday meals.

Ingredients

  • 5-6 red or russet potatoes
  • 2 tbsp softened butter
  • 4 oz softened cream cheese
  • 4 tbsp heavy cream
  • 4 tbsp milk
  • 1/2 cup cheddar cheese, shredded
  • 5 strips bacon, chopped
  • handful of green onions, sliced
  • 2 cloves garlic, minced
  • salt and pepper to taste

Instructions

  1. Place the potatoes in a large pot, cover with water, and bring to a boil. Cook about 25 minutes, or until tender when pierced with a fork.
  2. While the potatoes cook, fry the bacon until crisp, then chop roughly and set aside.
  3. Drain the potatoes and return them to the pot. Mash until mostly smooth.
  4. Add the butter, cream cheese, heavy cream, milk, minced garlic, shredded cheddar, and most of the bacon. Stir until well combined and creamy.
  5. Season with salt and pepper to taste. Stir in most of the sliced green onions, reserving a little for garnish.
  6. Transfer the mashed potatoes to a baking dish and bake in a preheated oven at 375°F (190°C) for about 10 minutes, until heated through and the cheese is melted.
  7. Top with remaining bacon and green onions. Serve warm and enjoy.
