If you’re familiar with Two Healthy Kitchens, you might already know I’m fond of almonds and coconut. I’ve used them in other favorites, so it’s no surprise they shine here too. Add my love for blueberries and white chocolate and you’ve got a combination that’s hard to resist.

These bars pack almonds, coconut, dried blueberries, white chocolate, oats and flax into each bite. The result is rich enough to satisfy a sweet tooth, yet loaded with healthy ingredients that make them feel like a virtuous snack: heart-healthy nuts, whole-grain oats and omega-rich flaxseed, plus antioxidant-rich blueberries.

These bars are incredibly versatile: serve them as a dessert, a grab-and-go breakfast, or a nutrient-rich snack. Either way, they disappear almost immediately, so plan to make extras.

No-Bake Blueberry-Almond Oatmeal Bars with White Chocolate

Ingredients
- 1 cup dried wild blueberries (about 6 ounces) (see note)
- 3/4 cup quick oats
- 1/2 cup sweetened flaked coconut
- 1/2 cup white chocolate chips, coarsely chopped
- 1/3 cup blanched, unsalted, slivered almonds
- 1/4 cup ground flaxseed meal
- 3/4 cup salted almond butter (see note)
- 3 tablespoons honey
- 1/2 teaspoon almond extract
Instructions
- In a medium bowl, combine blueberries, oats, coconut, white chocolate, almonds, and flax. Stir well to combine thoroughly.
- Add almond butter and honey, mixing a little to partially combine.
- Drizzle almond extract evenly over top and continue mixing until very thoroughly combined.
- Press mixture into an ungreased 8″x8″ baking pan. Immediately cut into squares (before refrigerating).
- Serve immediately or cover and refrigerate until serving.
Notes
Wild blueberries: Dried wild blueberries are typically smaller than regular dried blueberries, which helps prevent the bars from becoming too crumbly. If you only find regular dried blueberries and they seem large, chop them briefly before adding.
Almond butter: Almond butter varies widely in flavor and texture. We preferred salted varieties for balance; if using unsalted, add about 1/8 teaspoon sea salt to the dry ingredients and adjust to taste. Very thick almond butter may require reducing the flax or oats slightly so the bars aren’t crumbly. Homemade almond butter tends to be thicker and may need the same adjustments. Check labels to avoid brands with hydrogenated oils or added sugars.
Make-ahead tips: Store bars in the refrigerator for several days or freeze them wrapped tightly for longer storage.
