Quick Creamy Spaghetti Carbonara Recipe

You only need a handful of ingredients and less than half an hour to make this creamy spaghetti carbonara. It’s filled with crispy pancetta and coated in a silky sauce of eggs, parmesan and cream. This simple, satisfying pasta is one of my favourites — I hope it becomes one of yours too.

Creamy spaghetti carbonara

This creamy spaghetti carbonara is one of the quickest, easiest and most rewarding pasta dishes you can make. Despite its simplicity, the contrast of crisp pancetta with a rich, eggy sauce makes it deeply satisfying.

Traditional carbonara uses guanciale or pancetta, combined with pasta and a sauce made from eggs and cheese. For extra indulgence I add a little cream; it isn’t necessary but it produces an especially velvety result.

Ingredients for spaghetti carbonara

This version serves 4. Scale up the quantities proportionally if you need to feed more people.

  • Pasta – any long pasta works: spaghetti, linguine or fettuccine. Allow roughly 1 cup of cooked pasta per person; 8 ounces (about 225 g) of dry long pasta yields about 4 cups cooked.
  • Pancetta – diced. Guanciale is traditional; pancetta is an excellent substitute. You can use bacon if necessary, but taste for salt before adding extra seasoning.
  • Eggs – use one whole egg per person plus one extra. If you have concerns about undercooking, use pasteurised eggs.
  • Parmesan cheese – freshly grated. Pecorino Romano is a sharper alternative if you prefer.
  • Cream – single or double cream creates a richer sauce. If you prefer not to use cream, reserve extra pasta cooking water to loosen the sauce.
  • Black pepper – plenty of freshly ground black pepper really lifts this dish.
  • Salt – optional. Pancetta and cheese add saltiness, so taste before adding more.
  • Chopped parsley – for garnish, optional.

How to make spaghetti carbonara

1. Cook the pasta in boiling water according to the package directions until al dente. If you salt the water, remember the pancetta and cheese will add salt too.

2. Dice the pancetta into small pieces. Place it in a cold frying pan and warm over medium heat. Fry gently until the fat renders and the pancetta is crisp. Do not discard the oil — it will flavour and help bind the sauce.

3. While the pancetta cooks, whisk together the eggs, cream, grated parmesan and a generous amount of black pepper in a bowl.

4. When the pasta is done, use tongs to transfer it directly from the pot into the frying pan with the pancetta, letting a little of the cooking water come with it. Reserve an extra cup of pasta water in case you need to thin the sauce.

5. Toss the pasta and pancetta together to combine and distribute the rendered fat evenly.

6. Remove the pan from direct heat and once it has stopped sizzling, pour the egg and cheese mixture over the hot pasta. Stir briskly so the residual heat cooks the eggs gently, forming a creamy sauce that coats the pasta. Work quickly and keep stirring to prevent scrambling.

7. If the sauce seems too thick, stir in about ¼ cup of the reserved pasta water at a time until you reach the desired consistency.

8. Finish with chopped parsley and extra parmesan if desired, then serve immediately while hot.

Variations

This base recipe adapts well to additions. A few tasty options:

  • Fry 1 cup chopped mushrooms with the pancetta before adding the pasta.
  • Stir in about ½ cup frozen peas with the pancetta so they heat through.
  • Add halved cherry tomatoes to the pancetta halfway through cooking for a bright contrast.
  • Crush a garlic clove and fry it briefly with the pancetta, then remove before adding the pasta for a hint of garlic flavour.
  • Mix 1–2 tbsp chopped fresh basil into the eggs instead of parsley for a different herbal note.

Can I freeze spaghetti carbonara?

Freezing is not recommended. The sauce does not reheat well after freezing and tends to break, becoming watery and separated.

Can I make this dish in advance?

Yes. Cook the pasta and fry the pancetta ahead of time, storing them separately along with some reserved pasta water. Reheat gently together until piping hot, then add the egg and cheese mixture off the heat as described above to finish.

  4. When the pasta is ready, transfer it directly from the pot into the frying pan with the pancetta, using tongs so some cooking water comes with the pasta. Reserve extra pasta water.
  5. Toss pasta and pancetta to combine.
  6. Remove the pan from the heat. Once it’s no longer sizzling, pour the egg and cheese mixture over the hot pasta and stir quickly to form a creamy sauce without scrambling the eggs.
  7. If needed, add up to ¼ cup of reserved pasta water to loosen the sauce.
  8. Garnish with chopped parsley and extra parmesan, then serve immediately.

Notes
