Ingredients

  • 3 large eggs
  • 1 tbsp butter
  • 5 asparagus stalks, cut into 1 inch pieces
  • 1 slice white onion, finely chopped
  • pinch kosher salt
  • 1 oz smoked gouda, shredded
  • 1 small tomato, seeded and diced

Instructions

  • Whisk the eggs until frothy and uniform. Set the bowl near the cooktop.
  • Heat half the butter (1/2 tbsp) in a 10-inch nonstick skillet over medium heat. Add the onion and a pinch of kosher salt and sauté 3–4 minutes. Add the asparagus and cook until the onion is soft and the asparagus is crisp-tender, about 3–4 more minutes. Transfer the vegetables to a plate.
  • Add the remaining 1/2 tablespoon butter. Once it bubbles, pour in the eggs and let them cook until they are slightly wet on top, about 2 minutes.
  • Pile the shredded Gouda, cooked vegetables, and diced tomato down the middle of the omelette. Fold it over and wait until the cheese melts. Transfer to a plate and serve.

Notes

For a fluffier omelette, whisk the eggs well and stir them in the pan immediately after pouring. That creates smaller curds and more air in the finished omelette.
