Weekly Meal Plan: Simple Recipes & Grocery List for the Week

It’s been a peaceful weekend at our house. On Saturday I spent the morning writing at a coffee shop, then caught up with family and friends in the afternoon.

It rained from the moment we woke up, but that didn’t keep us indoors. Eric and I shared breakfast and a time of scripture reading, then took a long walk around the neighborhood with coffee in hand while a light drizzle fell. The air felt fresh and the birds were unusually lively, as if they were celebrating the rain along with us.
Later, Eric headed to the library while I enjoyed a longer run in the rain, visited our new nephew, and stopped by the grocery store.

Sunday: Spanish Wraps
Monday: Black-Eyed Pea Nachos
Tuesday: Baked Salmon with Quinoa Salad
Wednesday: Falafel Pitas
Thursday: Roasted Shrimp with Veggie Couscous
Friday: Grilled Chicken with Potatoes and Brussels Sprouts
Saturday: Roasted Tomato and Spinach Pizza
